They visit was exactly as I imagined, lots of food, drinks and giggles. She got to spend some bonding time with RJ. When we’re in NYC, we’re all over the place. So, she doesn’t get a lot of one-on-one time with him. Coming here to visit is a great way to avoid that. *Too bad that’s not understood by others* Anyway, it we had a blast. I got to show her around our beautiful city and surrounding area. I can’t wait to do it again next year!

These mojitos gave LIFE to my sister, Hubby and me! They are beyond YUMMY! My co-worker made these for another co-worker’s baby shower, a couple of months ago *Yeah, we had mojitos at a baby shower! We’re lushes like that! The mom to be had a virgin one* Anyway, they are oh so good. Here’s the recipe, because sharing is caring:
1 cup fresh squeezed limes (pulp, too)
1 pkg fresh mint leaves (if you pull it from the garden, one fistful of leaves). Remove leaves from stem and tear loosely.
2 cups sugar
2 shots Bacardi white rum (never dark!)– this is to taste – add more or less
2 liter bottle 7-up (you won’t need the whole bottle)
Pour lime juice and sugar into large glass pitcher. Stir until sugar dissolves.
Add mint leaves. Let it sit for about 5 mins. Stir again.
Add 1 shot rum. Let mixture sit for another 5 mins.
At this point you can let it sit for up to 30 mins before adding 7UP. Mint leaves wilt so don’t let it sit too long.
Stir in 7 Up – slow process because it froths up. Leave a bit of room at top in case you want to add more rum
Taste it! Add more rum if you want a little more kick. Sunday’s batch had 2 shots.
PS this recipe has actually made me want an electric juicer for the first time ever!
I also added to my ink collection!! I’ve been wanting this tattoo since I had RJ. However, I got my first tattoo when I was 18. I’d forgotten what it felt like and was apprehensive about the would be pain. Turns out it’s bearable!
BTW This one, RJ’s birthday, took only 20 mins.
